3 Minute Baked Apple

The 3 minute baked apple loaded with coconut sugar, dates, shredded coconut and slivered almonds is the easiest, fastest and most delicious and relatively healthy gluten free dessert ever!

Babysitting Audrey Joan, my beautiful and perfectly perfect niece is one of those tasks I am yet to fully master, everything is new and exciting for this little lady and sitting still for more then 30 seconds, unless The Wiggles are on, is not something Audrey Joan does. She moves from room to room with such gusto and enthusiasm, inspecting everything carefully and chattering away in her own special language, opening the fridge and cupboards pulling items out to display (often) in another room.

Now Audrey Joan is a funny one when it comes to her food, some days she’ll eat anything you serve up and then other days she just wants fruit, so I thought these Rockit apples, the world’s first specially bred miniature apples I found at Ziggy’s Fresh at the Fyshwick Markets might just pass the Audrey Joan taste test, they are a perfect size for tiny little hands, sweet and crisp with a thin skin for new teeth to chomp on and apparently her toys love them too!

A less impossible task is this 3 minute baked apple. Not traditionally cooked in an oven, this 3 minute baked apple microwave recipe is perfect for when you want something sweet, relatively healthy and quick too. Rockit apples are abundant at the moment and this recipe makes a tiny, tasty dessert for one. If I’m not feeling like making something elaborate and just want an easy, warm dessert to end an evening, I am all about the baked apple. Scoop out the core and load the insides with a mix of coconut sugar, dates, shredded coconut and slivered almonds. The baked apples soften into a spoonable treat while the coconut sugar melts down into a caramel syrup.

The only thing that could make this simple dessert even better is a scoop of double cream or ice-cream on the side.

Cooking time:  3 minutes

1 Rockit apple  1 teaspoon coconut sugar 1/2 teaspoon shredded coconut 1/2 teaspoon chopped medjool dates

1/2 teaspoon slivered almonds
