Avocado Mango and Ginger Smoothie

Today, we’re going tropical. My avocado mango and ginger smoothie is like a little island holiday right in your own kitchen. It will totally transport you to somewhere warm and sunny… at least in your mind!

I’ve been feverishly buying up all the fruit and vegetables high in vitamin C this past few weeks, because scurvy my friends, is a real problem. But now, I’ve got way more than one person can reasonably consume. #firstworldproblem Whenever I find myself with an embarrassingly large quantity of something, it generally ends up in my morning smoothies.

Hence, the birth of this avocado mango and ginger smoothie.

Avocados are one of my favorite smoothie ingredients because they provide that smoothie creaminess I crave and love. They are a great source of healthy fats, a good source of dietary fiber and high in vitamins K, C, B5, B6, folate, and potassium and an average avocado contains about 4 grams of protein.

Mangoes are no nutritional slouch either, they are a good source of dietary fiber, vitamins, minerals, and antioxidants containing vitamins A, C, E, and K, as well as potassium, phosphorus, iron, and magnesium. Mango can also be used on your skin to help clear up acne and blemishes too. And if all that wasn’t enough, research has shown mangoes protect against certain cancers too. Yup, now that’s what I call a ‘super fruit’.

But what you really need to know about this smoothie is, it’s:

  • Smooth and creamy
  • Not too sweet
  • Loaded with health
  • Fruity
  • Gingery
  • Delicious

The Ingredients

  • 1 cup filtered water
  • 1/2 avocado, peeled and seed removed
  • 1/2 cup fresh or frozen mango, diced
  • 1/2 teaspoon grated fresh ginger
  • 2-4 ice cubes (optional)

Wanna ‘pimp it up’ even more? Add …

  • 1 tablespoon coconut oil
  • 1/2 fresh or frozen banana

Show Time

Place all of the ingredients into your blender and blitz for 30-45 seconds or until the desired consistency is reached.
